
The Anatomy of Sushi ? #JLMTabemono While it has roots in Southeast Asia, possibly the most iconic Japanese food is the sushi. It consists of vinegared rice called shari, and neta/”meat” which are usually raw (sometimes cooked) seafood or vegetables. Common types of sushi are nigirizushi (hand pressed sushi, most common), makizushi (rolled sushi, most westernized), chirashizushi (“deconstructed” sushi arranged in a bowl), inarizushi (“brown” sushi, with the rice and meat encased in a special kind of fried tofu), oshizushi (box-pressed sushi), and narezushi (fermented rice and fish sushi).
