It differs from sushi from the way rice is used: sushi uses white rice with salt and vinegar, while onigiri uses either lightly salted plain rice, glutinous rice with red beans mixed into it, or fried rice. Onigiri is also more versatile and has so many combinations, depending on one’s taste and creativity. And that story where the samurai’s favorite snack is onigiri? So true. ???
