Nam Prik Pla Tu is a ubiquitous spicy savoury set of Thai dish. Nam Prik means chilli relish, and it is usually made with a combination of chillies and herbs, flavoured with lime juice, fish sauce, and palm sugar. In this case of Nam Prik Pla Tu, shrimp paste or ‘kapi’ is the main ingredient, along with, of course, the deep-fried Thai mackerel or Pla Tu. All to be served with assorted vegetables – fresh and blanched – and a plate of steamed rice.
